Counter Flow Chillers Back In:

These all metal chillers will cool wort at a rate of 1 gallon per minute and a half. The inner copper coil (where the wort runs) is fluted to give more heat transfer than regular tube. The outer steel tube (where the water flows) provides a durable shell for the chiller. These go for $110.00

Centennial Steam Beer

8 lbs Pale Malt Extract Syrup

1 lb. 60 L Crystal Malt

1/2 lb. Carastan Dark 30-37

2 oz. Centennial Boil 60 minutes

1 oz. Centennial Finish Last Minute

White Labs San Francisco Lager fermented at 60-68 degrees

Whiskey Barrel Porter

11 lbs. Pale Malt Extract Syrup

1/2 lb. Chocolate Malt

1/2 lb. Black Patent

1 lb. Dark Crystal Malt

1/4 lb. Special “B”

2 oz. Northdown Boil

1 oz. Kent Golding Finish last minute

White Labs Edinburgh Ale Yeast

Age in secondary one week with American 2 oz. oak chips that have been soaked in one pint of whiskey for 2 weeks. (during fermentation take a jar or small bucket with lid and “marinate” oak chips in whiskey for 2 weeks while beer is fermenting) Place oak in a pre-boiled cheesecloth sock then into fermenter. For extra whiskey punch add the “juice” with the chips.

If bottling add one pack champagne yeast when transferring to bottling bucket to insure carbonation. If kegging just keg and artificially carbonate.
