We will soon have Big Eye IPA available for full RETAIL SALE. Next week the latest batch of our India Pale Ale will be available in 1/2, 1, 5, and 15.5 gallon sizes. Don’t forget the tasters at our tasting bar. A special carbonated Black Marlin Porter available in JUGS and a 3 year old mead plus our regular offerings of Calico Copper and Yellowtail Pale Ale now on tap.

Congratulations to all the winners at The Del Mar Fair last weekend. I judged and I will say there were some great beers to be had. I do not have the results but if I can get them I will try to post them.

In store news we have all sizes of Stainless Kettles back in stock: 9 gal. $105.95, 12 gal. $115.95, 15 gal. $130.95, 20 gal. $149.95. Prices include lid. We also have the Colona Bench Capper limited offer $19.50 while supplies last. White Labs has releases their latest Platinum Series Yeasts: Hefeweizen 4 and Belgian Wit 2. For those looking for a bigger Co2 canister we have a new 10 lb tank ready to go at $149.95. In addition to our regular “pepsi” cornelius kegs at $19.95 we have a small supply of “coke” style corny kegs, available at the same low price. This price includes new O-ring kit.

Where’s the Wit White Beer (extract recipe)
(this refreshing summer time wheat beer is light and crisp with hints of lemon and orange)

5 lbs Dry wheat extract

1 ounce Hallertauer hop pellets boil 45 minutes
1/2 ounce Hallertauer hop pellets finish last 10 minutes

1/2 ounce Crushed Coriander after kettle off in muslin bag
1/2 ounce Sweet orange peel after kettle off in muslin bag
1/4 ounce curacao after kettle off in muslin bag

White Labs Belgian Wit 2 Ale Yeast

Wit beer (All Grain Version)
4 lbs Great Western 2-row
2 lbs Flaked Wheat
1 lb Malted Wheat
1 lb Flaked Oats

1 ounce Hallertauer hop pellets boil 45 minutes
1/2 ounce Hallertauer hop pellets finish last 10 minutes

Black Marlin Porter

Black Marlin Porter
(Dark, creamy, velvet smooth American style Porter served on Nitrogen- we brewed this beer because we couldn’t find it anywhere else!)

Porters are a style of beer that developed in London in the mid 1800’s. It has a confusing and difficult to sort out history. We know that some Porters began as a bartender’s blend of three ales that would be ordered as “three strands.” Breweries caught on to the popularity of the
blend and began to brew beers having the characteristics of the blend. This popular beer became known as Porter, because railroad porters were its biggest fans.

A typical London workingman’s meal of the time might have consisted of Porter, bread, and oysters (which were then considered to be lower class fare). As different styles of Porters developed, one of the most popular was dry porter, which emphasized the use of roasted barley. This type of Porter eventually became known as Stout. Today the use of roasted barley distinguishes Stouts from Porters.

Ballast Point Black Marlin Porter is a rich dark chocolaty Porter with a distinctive American hop character. It is nitrogen dispensed which gives it a creamy texture, thick head and a balanced flavor that is reminiscent of traditional British cask conditioned ales. It is a great beer to go with
hearty foods and is surprisingly one of the few beers that goes well with dessert. One of our favorite combinations here at Ballast Point is Black Marlin Porter with apple pie a la mode.den.
