The 10th Annual Southern California Homebrewer’s Fest will be held at Lake Skinner in Temecula on May 6th from 10am-9pm. The event runs $30.00 pre-event and $50.00 at the door. We have ticket request forms at Home Brew Mart that must be submitted before May 1st. You may send a ticket request to :

Another happening this month is at HOPS Monday, March 27th at 6:30 pm. The Hops March Beer dinner is $18.95 plus tax and gratuity and includes the following: Amber Ale steamed Black Mussels, ESB Marinated Lamb Loin Chops with New Potatoes and Mint Sauce, and Chocolate Orange Stout Cake. Each course is served with a 10 ounce beer. Chuck Silva, brewer at Hops will be on hand to answer brewing questions and to give tours of his brewery. Call for reservations 858-587-6677 If you haven’t been to Hops in a while give it a new look. Chuck has reworked the beers at Hops and you will be pleasantly surprised.

The recipes this week employ Dry Malt in place of Syrup malt. This allows for a lighter color and lessened carmel flavor. Any time you are looking for less carmel taste and/or less color you can use Dry Malt powder. You can sub it for the syrup any time at the rate of about 80% of the syrup. So if the recipe calls for 8 lbs of Syrup you would use 6.4 lbs of Dry.

Honey Wit (Belgian Wheat Beer)

3 lbs. Dry wheat/malt extract

2 lbs. Light Honey (such as Orange or Clover)

1 ounce Liberty hops to boil 45 minutes

1/2 ounce sweet orange peel to steep 10 minutes after boil

1/4 ounce bitter orange peel (curacao) to steep 10 minutes after boil

1/2 ounce crushed coriander to steep 10 minutes after boil

6 lbs Pale Malt Syrup

1/4 lb. 10 L Crystal Malt

Still not sure when the all grain class will be, as we plan on adding some new equipment to the brewery. This will probably take most of my time for the next month or so.

Class update: ALL GRAIN CLASS Sunday, February 6th

BEGINNER BREWING CLASS

Tuesday January 18th

The beginner class is free and covers basic-intermediate brewing, from brewing to bottling. This is the class to take if you happened to get a brewing kit for Christmas, or if you just want a refresher course on brewing. The class goes from 6:00-7:45 p.m. and is held right here at Home Brew Mart. No sign up required, please call one day prior to class to ensure scheduling.

The all grain class will cover advanced brewing techniques including infusion mashing and the systems employed for converting the barley’s starch to sugar. The class will be taught by Home Brew Mart’s Yuseff Cherney. Yuseff has been teaching brewing for 7 years, brewing all-grain at home for 9 years and professionally brewing at Ballast Point Brewing Company for 3 years. The class is held from 12:00-4:00 p.m. and the cost is $20.00. With the enrollment each student will receive a coupon good towards the first batch of grain for their first all-grain brew, valued up to $9.22,

(total grain bill not to exceed 10 pounds limited to 20% specialty grain) Sign up is required to ensure attendance. Class subject to cancellation based on expected attendance, please call one day prior to class to ensure scheduling.

Age in secondary one week with American 2 oz. oak chips that have been soaked in one pint of whiskey for 2 weeks. For extra whiskey punch add the “juice” with the chips.

There will be a free beginners brewing class this Tuesday, November 16th from 6:00-7:45 p.m. The class will be held at Home Brew Mart located at 5401 Linda Vista Road suite 406. The class will cover basic top intermediate brewing including selection of ingredients, cooking and bottling. There is no sign up required, just show up and bring a friend.

On the brewing frontier, The 3rd Annual Strong Ale Festival will be held December 3rd, 4th and 5th at the Carlsbad Pizza Port. This festival features beers over 8% alcohol including Barleywines, Imperial Stouts, Belgian Ales, Scotch Ales, and more! The fest starts at 4:00 p.m. on Friday and 11:00 a.m. on Saturday and Sunday. The address is 571 Carlsbad Village Drive. The cost of the event is $10 to get in which includes a festival glass and three tasters. Additional tasters are $1 per 4 ounces. The Brewing News

We will have special business hours on this Monday, Labor Day! We will be open from 10:00-2:00 p.m.

Our next free beginning brewing class will be Thursday, October 7th. This class will cover basic-intermediate brewing, and is held right here at the brewery. No sign-up is required, just show up!

Street scene is rapidly approaching. Ballast Point will be part of the brew fest along with many other local as well as out of town breweries. The Scene happens Sept. 10,11,12 and will be held in the Gaslamp. If you have never been to Street Scene, it is probably the biggest party of the year. With tons of bands, food, and beer this one shouldn’t be missed.

The San Diego Festival of Beers is also in September. It will be held Sept. 24th at the intersection of Columbia and B streets, right next to the downtown Karl Strauss. Over 50 breweries will be present, as well as live entertainment, food and wine. The festival will be from 6:00-midnight, $15 for 6 beer tasters-more can be purchased. For more info call (858) 672-3972 Proceeds go to benefit cancer research and treatment.

Sorry to say that if you did not go to the Mammoth Festival of Beers you really missed one of the best beer/blues events of the year. With unlimited tasters, free food and great music for $25 it could not be beat. Breweries from all around California to the Pacific Northwest were represented and excellent beers were being poured everywhere. Thanks to all the folks in Mammoth for putting on such a great festival! See you next year!

The latest in Brewing News!

There are a few things happening this week. There will be a BBQ and beer tasting at Terra restaurant in Hillcrest on Wednesday, August 18th at 6:30 p.m.. There will be Adobo grilled flank steak, Thai spiced fruit salad, smoked salmon and dill pasta, house smoked baby back ribs as well as beers from Ballast Point, Stone and Hang Ten. The cost is $30 of which $20 goes to benefit Ordinary Miracles. The Mammoth 4th annual Festival of Beers and Bluesapalooza is going on August 20-21. For info call (760) 934-3498. There will be great beers as well as excellent fishing, hiking, and mountain biking in the local mountain areas.

We will be having a beginning brewing class tommorow, Thursday July 15th from 6:00 to 7:30 p.m. This class will cover steeping grains and basic to intermediate brewing. There will be a mini real ale festival this friday at O’Briens Pub. This fest will pour the award winners from the festival earlier this year at Pizza Port. The real ale night will be held Friday, July 16th and Saturday, July 17th. Be warned that the beer could go quick so Friday might be the call. For more info call Jim at O’Briens at 715-1745. 11 lbs. Pale malt syrup

1/2 lb. 20 L Crystal

1/2 lb. Carapils

1/4 lb. Caravienne

1/2 lb. Gambrinus Honey Malt

1/4 lb. Dark Munich

2 oz. German Tradition boil 75 minutes

1 oz. Liberty finish last 10 minutes of boil

Cold ferment with White Labs German Lager or warm with California Ale

English Mild

6 lbs. Pale malt syrup

1/4 lb. Chocolate malt

1 lb. Dark Carastan

1/2 lb. Dark British Crystal

1 oz. Fuggle boil 60 minutes

1 oz. Fuggle finish last minute

Raspberry/Cherry Wheat Beer

6.5 lbs Wheat Malt

One can Oregon aseptic puree either Cherry or Raspberry. (can be added at any stage of the process)

1 oz. Hallertauer boil 45 minutes

1/2 oz. Hallertaur finish last 15 minutes

any ale yeast will work. For an even more fruity flavor try the Hefe Weizen yeast.

All Grain Nut Brown Ale

8 lbs Great Western Pale 2-row

1 lb. Victory/ toasted malt

1/2 lb. Chocolate malt

1/2 lb. 20 L Crystal

1/2 lb. 40 L Crystal

1 1/2 oz. Willamette boil 60 minutes

1 1/2 oz. Kent Golding finish last minute

Golden Honey Hefeweizen

3 lbs. Briess Dry Wheat Malt extract

2 lbs. Alexander’s Wheat Malt syrup

1 lb. Orange Blossom honey

� lb. Carapils/Dextrin

� lb. Caravienne

1 oz. Saaz Pellets boil 45 minutes

1 oz. Saaz Last 5 minutes of boil

White Labs Hefeweizen Yeast

special instructions: add honey at end of boil then put lid on and let sit 15 minutes to pasteurize the honey.

India Pale Ale

10 lbs. Alexander’s Pale Malt extract

� lb. 40 L Crystal malt

� lb. Belgian Caramunich

� lb. Victory malt

2 oz. Chinnok boil 60 minutes

2 oz. Centennial added when boil is over (burner off)

White Labs California Ale Yeast

Millenium Mead

16 lbs. Light honey (orange or Mt. Flower)

3 tsp. Yeast nutrient

3 tsp. Yeast energizer

� tsp. Irish moss

2 packs Champagne yeast

special notes: add nutrient and energizer to cool mix when you add yeast.

This is a stronger sweet mead meant to be served still (non-carbonated) so no priming is necessary and longer aging is recommended.

The big news is it is time to brew for the Del Mar fair (hurry there is not much time left). The contest is Sunday, June 27th at the Paddock Stage Area. Completed entry forms are due on or before June 11th. Entry forms are available at Home Brew Mart. The entry cost is $5 per exhibitor. This is a per person fee not a per entry fee. You must submit 2 twelve ounce bottles with plain caps or blacked out caps. Home Brew Mart does not accept entries or take entry forms! For more info call (619) 792-4207 Judging takes place at 12:30pm. June 27th. Any info I missed is on the Entry form so pick one up today!

Beer festivals, homebrew classes and homebrew recipes what more can you
want?

The 2nd annual Real Ale Festival is scheduled for Friday and Saturday,
May 14th and 15th starting at 3p.m. Friday and 11 a.m. Saturday until
closing time. The festival will be held at Pizza Port Carlsbad located
at 571 Carlsbad Village Drive just � mile west of I-5 in Carlsbad. The
cost is $10 to get in and includes a festival Imperial pint glass and 5
tasting tickets good for 5 oz. pours. For more info call (619)

There will also be a Belgian Beer tasting at the Whole Food Market in
Hillcrest Friday April 23rd from 6:30-8:30 p.m. Hosting the event will
be Johnny Fincioen who has lived in Belgium for 40 years and has been
dealing with Belgian Beer for years. Space is limited so please call
ahead (619) 294-2800.
Of course we should all know by now that the Southern California Beer
Festival is scheduled for May 8th at Lake Skinner in Temecula. The
cost is $30 in advance and $50 at the door. The festival will be held
from 10:00 a.m. to 9:00 p.m. We do not have tickets at the store so
call the info line for tickets. If you need further info please call

Watch in amazement as beer is actually brewed right before your eyes!
The class will be held from 6:00-7:30 May 4th right here at Home Brew
Mart. This class will cover brewing with extract and steeping grains as
well as transferring and bottling. Master brewer Pete A’hearn will
teach the class and share his personal outlook on brewing. The class
is free that is correct it costs you nothing so bring a friend or two
and learn how to turn water into beer.
